(sounds simple - it is- but look it up…)
Beer battered soft shell crabs and NOLA remoulade (jazz feat weekend)

Grilled Asparagus and Garlic Shrimp
Marinate shrimps (in shells) with tons of chopped garlic, lemon and some olive oil. Grill shrimps on medium heat alongside lightly olive-oiled asparagus. For the salad, create individual cups of butter lettuce and fill with fresh cilantro salsa and feta cheese. Serve with couscous garnished with fresh basil and lemon wedges.
Mom’s Pistachio Salmon
Place salmon (skin down) on tinfoil and pat pistachios into the fish. Drizzle with olive oil and lemon and bake at 425-450 for 10 minutes or until pistachios begin to toast. Bake asparagus the same way. Serve with whole wheat couscous, wild rice or warmed bread.

Wild Rice, Brown Rice and Quinoa with baked curried lime salmon and an arugula salad with balsamic drizzle and lemon juice, smoked mozzarella.
Roasted Yukons, Filet and Arugula Salad
Roasted Yukon potatoes tossed with fresh thyme, yellow onions, sharp cheddar, salt and pepper. Served with sliced and roasted tomatoes over arugula with white balsamic.
Filet grilled and served with mushroom sauce, consisting of mushrooms, garlic, thyme, Cabernet and beef stock.

MJ’S Teryaki Salmon
Thick salmon filets with homemade teryaki (fresh orange juice, brown sugar, soy sauce, ginger and garlic). Marinate salmon in teryaki, then bake in a hot oven. Boil and reduce the marinade to make a thick glaze. Served with sushi rice and steamed broccoli.
